Set within the historic vaults of the Petit Champlain district, Tanière³ has been a destination for ambitious dining in Quebec City since 1977. The restaurant occupies the stone cellars of the Leber and Charest houses, steps from Place Royale and the St. Lawrence River — a setting that feels both ancient and intimate.

Chef-owner François-Emmanuel Nicol and dining room manager Roxan Bourdelais lead the team, guided by the vision of Frédéric Laplante of Groupe La Tanière. Their modern cuisine is anchored in the province’s terroir: five foragers supply wild plants from distinct regions of Quebec; meats come from farms selected for animal welfare and environmental practices; vegetables are grown by a childhood friend of the chef, who personally chooses the seeds each winter. "We have an incredible terroir here," Nicol says. "Our priority is to develop it and, above all, to make it known."

The only menu is a surprise tasting of 12 to 18 courses. Guests choose between two experiences: the vaulted dining room ("voûte salle à manger") for a classic immersion, or the chef’s counter ("voûte comptoir-chef") for a front-row view of the kitchen. Head sommelier Jonathan S. Ross and head bartender Simon Faucher craft wine and non-alcoholic pairings that echo each dish. "Let yourself be moved by an immersive culinary art where the crunch of a root, the scent of a wild herb, the warmth of a broth, and the murmur from the kitchen transport you from one vault to the next," the restaurant writes.

This meticulous, ingredient-driven approach earned Tanière³ a Michelin 2 Star in 2026, a recognition that underscores its place among Canada’s most refined tables. Whether seated in the stone-vaulted dining room or at the counter, the experience is a concentrated taste of Quebec’s boreal identity — wild, precise, and deeply personal.
