The story

Noštromo in Split: A Legacy of Dalmatian Seafood

The kitchen and its legacy

Noštromo in Split occupies a prime spot beside the municipal fish market, anchoring decades of Dalmatian seafood tradition. Chef Zlatko Marinović guided the kitchen for years, establishing a straightforward approach centered on daily catches. Recent ownership changes brought fresh leadership, yet the culinary direction stayed firmly rooted in established techniques. This commitment to continuity secured a thirteen and a half point rating from Gault & Millau for 2026.

Signature plates

The seafood selection emphasizes raw preparations and precise heat application. Live scampi appear regularly on the counter, a sourcing method that has become increasingly uncommon in modern kitchens. The tartare and carpaccio pair delicate crustacean with bright yellowfin tuna. A cleanly grilled dentex finishes the plate with crisp skin and tender flesh.

The dining room

Interior details favor preservation over renovation. Curated artwork hangs throughout the space, substituting older canvases with contemporary pieces that match the original scale. Wooden fixtures and familiar seating arrangements keep the layout recognizable to regular patrons. Management chose not to erase the previous era, allowing the venue’s identity to remain intact. That measured strategy ensures the coastal cooking stays the focal point of every visit.
