The story
Kaštel occupies the preserved remains of a 13th-century Venetian defensive tower within Hotel Bastion, itself built into Zadar’s UNESCO-listed walls. The dining room and terrace are part of a space where history is tangible – stone walls, scars of the past, and a palpable sense of change and contrast. The city’s main monuments, including the Sea Organ and Greetings to the Sun, are a short walk away.
The kitchen focuses on Zadar’s old recipes and excellent homemade food, interpreted through a contemporary Mediterranean lens. Every dish is paired with a selected choice of premium quality wines, sourced to complement the flavours of the region. The approach is rooted in local tradition but presented with modern refinement – a direct reflection of the city’s own transformation from a fortified town to an open, welcoming metropolis.
