Konoba Griblja in Sukošan, just a few kilometers from Zadar, is a stone house by the sea that feels both ancient and entirely alive. The old Dalmatian building, furnished with handcrafted objects and set against the backdrop of a typical coastal village, has been reinvented by chef and owner Braco Sanjin.
Sanjin is no newcomer. A master chef of the first rank, he has cooked up and down the Croatian coast—Rijeka, Istria, Krk, Pelješac, Split—and spent five years in the Italian Alps at Hotel Ariston in Madonna di Campiglio. He returned to Konoba Griblja in 2022, this time as owner, and the restaurant soon earned a MICHELIN recommendation. The guide’s recognition underscores the quality of the kitchen and the care taken with every plate.
The menu is contemporary Dalmatian cuisine built on fresh seasonal ingredients. Sanjin’s authorial dishes include carpaccio of smoked swordfish with orzo, cranberries, and Timut pepper; wheat with smoked seafood and oyster carpaccio; and a trisotto of Adriatic cuttlefish with cuttlefish carpaccio, tomato concassé, and carrot cream. Alongside these, one finds heartier offerings such as horse beefsteak with demi-glace, beefsteak in Prošek sauce with almond purée, and foie gras medallions in cognac sauce with tiger prawns, hazelnut crumble, and Granny Smith apple cream. The wine list is a serious affair, gathering the best Croatian labels—from the Pošip of Korčula to the Plavac Mali of Pelješac—alongside Champagne and Italian classics.
The setting matches the food. In winter, a fireplace warms the fifty-seat interior. In summer, the forty-seat terrace opens to the mild Dalmatian air.
