A Farm with Deep Roots

Ribehøj sits on land that has been in the Kjær family since 1931, when Svend first bought the farm with its 34 hectares of field, meadow and bog. What began as a working agricultural property — with its own livestock, dairy and seasonal stores put up by hand — has evolved across three generations into something quite different: a biohotel and fine dining destination on the old borderland between Denmark and Germany, overlooking a small lake that lends the setting a quiet, unhurried quality.

Today Karina and Carsten Kjær run Ribehøj as the third generation, guided by the same respect for the land that shaped the place from the start. The philosophy is concrete: the hotel is built in allergen-friendly materials — wood, stone and sand — insulated with timber and sheep's wool, and powered by CO₂-neutral wind energy. The kitchen draws on herb gardens and fields on the property, and what cannot be grown here is sourced locally and in season. The estate also runs its own vineyard of more than 20,000 vines, producing wine served at the table.

The Kitchen and the Table

The restaurant offers three formats: a lunch menu of reinterpreted classics, a four-course experience menu built around seasonal local ingredients, and an in-suite tapas selection with freshly baked bread, local cheeses and charcuterie. The experience menu is the kitchen's most ambitious expression — composed innovatively, the restaurant says, with good taste at its centre.

White Guide recognised Ribehøj at a very fine level in 2026, and the review is telling about what makes the place worth the drive. The critic singles out a perfectly crisp-skinned piece of hake with pointed cabbage, wood sorrel and a split cream with green oil as a highlight — precise, well-balanced and genuinely delicious. The desserts also land cleanly: strawberry ice cream with meringue and tarragon cream, followed by lemon balm ice cream with rhubarb, white chocolate cream and a final flourish of fine pastry craft.

Hospitality as the Anchor

What the White Guide review returns to most warmly is the service. The front-of-house team is described as "completely impeccable" — empathetic, knowledgeable, attentive without being intrusive, and able to explain the wine list in a way that informs without condescending, whoever is at the table. That quality of welcome is not incidental to Ribehøj's identity; it is, in the words of the family themselves, what the place has always been built around. "An oasis of gastronomy and wellness, where Jutland hospitality is unmistakable" is how they put it — and on this point, at least, the critics agree entirely.

Here is an excellent view over a small lake on the edge of the old borderland between Denmark and Germany. A newly renovated house provides the setting for the area's most acclaimed restaurant, where the menu is classic and follows the common trend of foamy sauces paired with green oils, rich glazes, and a pronounced tendency toward the overuse of edible flowers. From the happy guests, one can hear that it's a relief that it's not too experimental. The completely fantastic, sweet, empathetic, and knowledgeable waiter, who in many ways makes this evening worth remembering, frequently stops by to ask about their wishes and whether glasses need refilling. Wine explanations are tailored to the listeners, offering both information and respect regardless of who receives them. Flawless and delicious is the large portion of perfectly skin-roasted pollock served with savoy cabbage, sorrel, and a sauce featuring green oil and delicate fish herb flakes. Also excellent is the Italian wine poured with good acidity and body, Tenuta da Mar's Calmo Soave Superiore, which, like the Brunello di Montalcino served with the Duroc pork, is both full-bodied and deep without crossing into the jammy character that a couple of the other wines do. It is also the Duroc pork, together with the freshness and fine craftsmanship of the desserts, that elevates the menu. This fine breed of pig is not often seen presented so purely. Unfortunately, the pork's delicate flavor was dealt a fatal blow by a heavy BBQ sauce. It's a pity for the dish's good concept featuring fennel and tomatoes, which failed to contribute anything to the flavor profile. Fortunately, the desserts landed sharply with strawberry ice cream, meringue, and tarragon cream, followed by lemon balm ice cream, rhubarb pieces, white chocolate cream, and yet another couple of ill-fitting pansies. Despite these missteps, Ribehøj has its moments, the lovely view, and above all the fantastic hospitality, which secures it a place in the very good category.
