A Gastronomic Whole, Not Just a Meal

At Vendia Gourmet, the ambition is stated plainly: to deliver not merely a delicious meal but a complete experience in which flavour, presentation, drink pairings, composition and atmosphere converge into something greater than the sum of their parts. Part of Bryghuset Vendia — a broader hospitality house on Markedsgade in Hjørring — the gourmet restaurant operates Thursday through Saturday evenings, by reservation only, and has become the standard-bearer for serious fine dining in North Jutland.

Rooted in the Local Landscape

Every menu at Vendia Gourmet is built around a unifying theme, and each individual course is constructed with a particular local producer and ingredient at its centre. The kitchen draws on fauna and flora from the surrounding region, treating those raw materials with what the restaurant describes as "special respect and care." The current menu, themed around the world of the forest, moves through eleven courses — opening with champagne and a sequence of snacks that includes an ultra-thin, crisp hollowed-out Jerusalem artichoke shell filled with a creamy hand-cut venison tartare, the tartare's gentle sweetness meeting the artichoke's nutty finish in the aftertaste. From there, a course of trout, crab and cucumber finds delicate balance with crisp glass cabbage and a refreshing cucumber sauce, each ingredient holding its own within a bright, cohesive flavour picture.

Recognition That Means Something

White Guide awarded Vendia Gourmet its Masters level distinction for 2026 — the highest tier the guide assigns — citing the kitchen's consistent thematic coherence across the menu and the quality of individual courses such as the rabbit saddle: juicy and tender, accompanied by a soufflé forcemeat with herbal seasoning and a rabbit rillette concealed beneath fried ground elder for texture. The guide also praised the wine pairings as well-matched throughout the evening, and singled out the attentive, communicative service team. For a restaurant in a mid-sized Danish provincial city, that level of recognition is a meaningful marker.

The Menu and What It Costs

The full tasting menu is available with a juice pairing at DKK 1,995 per person, with a wine menu at DKK 2,500, or with an exclusive wine menu at DKK 5,000. Wine is sourced in collaboration with Kjær & Sommerfeldt. Suppliers may vary according to seasonal availability — a natural consequence of anchoring the cooking so firmly in what the local landscape actually produces at any given time.

Vendia Brewery's gourmet restaurant has always ensured a consistent thread through its menu via a theme-driven progression, and this year's theme takes us on a gastronomic journey interpreting the forest's universe. With champagne in hand, the snack bombardment begins, where one of the best bites is an ultra-thin shell of crispy hollowed-out salsify filled with a creamy, lightly whipped venison tartare. There is a good harmony between the tartare's subtle sweetness and the salsify's nutty notes that emerge in the finish. The first proper course is also one of the evening's highlights, where the fresh and delicate flavors of trout, crab, and cucumber find a fine union with crisp Napa cabbage and a refreshing cucumber sauce. The individual flavors of the ingredients each shine beautifully, and in this fresh flavor profile, everything comes into its own. The progression across the 11 courses is well-balanced in intensity and cohesion, and there are many details and clever touches in the presentations, though sometimes a few too many. Throughout the evening, we were accompanied by a great many greens intended to conceal or support an edible element, but this was repeated a bit too much without the connection to what was actually being eaten always being entirely clear. It therefore felt more like a somewhat overly conceptual and simplistic reference to the otherwise excellent overarching forest theme. The intermezzo with smoked eel and potato was well-conceived and a classic fine-dining partnership, but the dish was accompanied by a chicken consommé that had become so concentrated it introduced bitter notes, making it too dominant and highlighting a slightly metallic tone in the eel. Gerard Bertrand's full-bodied blend Cigalus Blanc, primarily Chardonnay, was initially a good match for the eel and potato, but the oak aging also came across as a touch too pronounced in combination with the bitter tones in the consommé. Otherwise, the wines were excellent throughout the evening and well-paired with the individual courses. The rabbit loin, which serves as the centerpiece of one of the evening's two main courses, is cooked beautifully. Juicy and tender, featuring a soufflé mixture that provides a fine supporting herbal seasoning. A flavorful rabbit rillette on top is concealed beneath fried purslane, which adds a touch of crunch and texture. The dish is served with a sauce described as a chicken jus, but which is actually closer to a sticky glaze. Once again, the sauce has become too concentrated for the delicate rabbit, and a classic light jus would have been a better fit. The service is highly attentive, speaking at length about the wines and dishes, and despite a few distracting details, Vendia Gourmet is a truly excellent example of North Jutland top gastronomy.
