The story
At 180° by Matthias Diether, located in Port Noblessner, the restaurant describes itself as “a stage for you to love and savour food.” With an open kitchen and individual tables overlooking the sea, the setting is intimate and focused. The kitchen is led by chef Matthias Diether and his dedicated team, whose work has earned two Michelin stars for excellent cooking.
The heart of the offering is the Matthias Diether tasting menu, available as a full degustation at €235 or a four-course option at €185. A Premium Experience at €325 includes caviar and a cheese selection from affineur Bernard Antony. Dishes change with inspiration, but recent examples include Seafood Raviolo with spinach and saffron, Oxtail with mimolette and caviar, 180 Degrees Foie Gras with hazelnuts, and Carrot Variations prepared 180° style. Sweet creations are made in collaboration with pastry chef Kay Baumgardt.
For those seeking a closer view, the Chef’s Table seats up to ten guests directly in the kitchen, offering the full menu as a spectacle.
The sommelier offers a classic wine pairing at €155, a premium pairing at €289, and a mocktail pairing at €99. A vegetarian menu is available with 24-hour advance notice. The contemporary cuisine is built around precision and seasonality, with each plate reflecting the kitchen’s singular vision.
