The restaurant occupies a historic building in the heart of Tallinn's Old Town, where a 13th-century city wall meets contemporary Nordic minimalism. ÂME offers two degustation journeys. The six-course menu (69 €) includes dishes like pork belly with jalapeño kimchi, beef tartare with chili jam and pecorino foam, seafood agnolotti, and barramundi with beurre blanc and ginger-sunchoke cream. It ends with a "Raffaello" dessert of amaretto almonds and coconut cream.
The eight-course menu (89 €) expands the experience with vol-au-vent of goat cheese and sea buckthorn, wild boar cappelletti with porcini sauce and stracciatella, and a petite tender of beef with root vegetables and timut pepper sauce. The meal closes with a vegan cheesecake of blueberry, sea buckthorn, and strawberry.
À la carte options range from oysters with quince granita to smoked eel taramosalata, lobster tail, and a symphony of cabbage with truffle and leek. Each dish is built around seasonal Estonian produce, elevated by technique and imagination.
