A Dining Room Above the City

On the 30th floor of the Swissôtel, Horisont Restaurant & Bar commands one of Tallinn’s most dramatic vantage points. Floor-to-ceiling windows frame the Baltic Sea and the city’s skyline, creating a setting that is both intimate and expansive. The atmosphere is refined but welcoming, designed for occasions that call for something special.

The kitchen is led by chef Marko Sõmer, whose career includes a stint at Gordon Ramsay’s Ritz-Carlton in Ireland. At Horisont, his cooking is built on a foundation of classical French technique, layered with subtle, complex Asian flavours. Each dish is composed of carefully chosen components, with texture, colour and balance treated as essential as taste.

Menus Built on Precision

The à la carte menu opens with signatures like the tiger prawn, served with langoustine and a rich lobster bisque, or the yellowtail amberjack brightened with wasabi, ginger, cucumber and orange. For mains, lamb arrives with a pumpkin salad, pistachio and ruby onion, while the monkfish is paired with seaweed, cauliflower, saffron and prosciutto jus. Vegetarians are not an afterthought: celeriac comes with a pumpkin seed cream and buckwheat crisp, and the white radish is roasted with maple syrup, king oyster mushroom and Madeira sauce.

Two tasting menus offer a curated journey through these flavours. The Maitsete Rännak (Flavour Journey) at €99 runs through seven courses, from an amuse-bouche to petit fours, while the shorter Maitsed Linnulennult (Tastes in Flight) at €86 covers five. Both are designed to surprise and satisfy.

A Wine List to Match

The wine programme is overseen by head sommelier Jüri Viital, who brings twelve years of experience to a cellar that spans both classic and lesser-known labels. The list is extensive enough to find the right companion for every dish, whether it’s a delicate starter or a robust meat course.

Horisont’s recognition by the Michelin Guide for 2025, alongside a Best Fine Dining Silver Spoon award in 2024, reflects a kitchen that delivers with consistency and flair. This is a restaurant that earns its place among Tallinn’s finest – not through flash, but through the steady, confident execution of modern European cuisine.
