Chef Maido Maiste’s Clear Hand

Head chef and partner Maido Maiste knows how to keep things simple without losing elegance. Having worked in Estonia’s top kitchens and abroad, he brings a clear personal style to Lee Brasserie. His food is modern cuisine at its most approachable: layered but never fussy, with subtle Asian Fusion influences that appear in fresh herbs and bright, clean dressings. The result is a menu that feels both familiar and exciting.

What’s on the Table

The Lee Elamus (€65 per guest) is a six-course tasting menu built for sharing. For a shorter option, the Prix Fixe (€39) offers Skagen, risotto, and crème brûlée. À la carte highlights include a feta salad with tahini yogurt and herb dressing, a butcher’s terrine with mead mustard and cornichons, and beef tartare with mushroom cream and crispy onion. Mains range from wild garlic risotto with Taleggio to trout fillet with leek and blueberry sauce, and a beef sirloin with truffle-potato cream and chimichurri. To finish: date pudding with salted caramel and vanilla ice cream, or a classic crème brûlée.
