The story
In the heart of Aix-en-Provence, on the quiet Rue de l'Aumône-Vieille, Étude offers a dining experience that is both precise and personal. With just twelve seats, this intimate restaurant has earned a Michelin star for its focused, ingredient-driven approach to modern cuisine. The kitchen draws from the rich bounty of the region—fish, meat, and vegetables sourced from the landscapes between the sea and the mountains.
The dining experience is built around three distinct multi-course menus, each evolving daily with the best available produce. For lunch, the "Extraction" menu offers a three-sequence introduction to the kitchen's style. The "Concentration" menu, available at both lunch and dinner, presents five sequences showcasing the finest seasonal ingredients. For a deeper exploration, the seven-course "Etude" menu, served exclusively at dinner, incorporates prestige ingredients for a more elaborate progression. Lactose-free and gluten-free options are available, reflecting a thoughtful approach to dietary needs.
Service at Étude is guided by a dedicated maître d’hôtel who oversees each guest’s experience from reservation to departure, ensuring a seamless and attentive evening. The atmosphere is one of quiet concentration—on the plate, on the wine from a carefully curated cellar, and on the moment itself. It is a place where the cooking speaks clearly, and the setting allows it to be heard.
