The story
At Villa La Coste, the restaurant bearing Hélène Darroze’s name sits within a 200-hectare organic vineyard, halfway between Aix-en-Provence and the Luberon Natural Park. The kitchen is now led by Chef Florent Pietravalle, whose creative, sensitive approach finds a natural home here.
Pietravalle’s cooking is described as “a living cuisine,” in resonance with the estate’s polyculture. He draws instinctively from the rhythm of the land, letting each ingredient find its own place on the plate. The result is modern cuisine that feels both grounded and vibrant, shaped by the surrounding Provençal landscape.
