Le Art – A Gastronomic Table Rooted in Provence

At Château de la Gaude, a restored 18th-century bastide surrounded by vineyards and olive groves, Le Art is the estate’s flagship gastronomic restaurant. Opened in 2019 alongside the château’s transformation into a five-star hotel and cultural destination, the restaurant takes its name from the contemporary art that punctuates the property. The setting is both grand and intimate: a dining room that opens onto the park, with a terrace for warm Provençal evenings.

Chef Matthieu Derible leads the kitchen at Le Art. His cooking is a precise, seasonal expression of modern cuisine, rooted in the produce of the region. The estate’s own vineyards and kitchen garden inform the menu, alongside foraged herbs and market finds from Aix-en-Provence.
