The story
Licandro - Le Bistro occupies a two-level space on rue de la Couronne in the heart of Aix-en-Provence. The ground floor and vaulted cellar create an intimate, welcoming atmosphere. Here, the kitchen produces delicate cuisine that highlights the flavours of Provence.
Chef Felipe Licandro trained at Spain’s prestigious CSHG hotel school before refining his skills in Paris and Burgundy. He worked as second chef at the Marriott Champs Elysées, then at SYDR (Maison Alain Dutournier), followed by Le Céladon at the Hôtel Westminster (a Michelin-starred kitchen under chef Christophe Moisand), and finally at L'Espérance of Marc Meneau (two Michelin stars). These experiences taught him to manage large brigades and build relationships with suppliers. Later, as chef at Tanao Ando at Château Lacoste, he began revisiting French gastronomy with a Provencal accent, always using fresh, seasonal products. Opening his own bistro was the natural next step, a place where his creativity could flourish.
The menus at Licandro change regularly, built around what the market offers. At midday, a three-course menu gives a taste of the chef’s approach; in the evening, a tasting menu and à la carte choices allow for a deeper exploration. The wine list accompanies the food with regional selections.
Licandro - Le Bistro has held a place in the Michelin Guide since 2022, earning a Recommended distinction. It is also a member of the Collège Culinaire de France. Chef Licandro’s cooking – rooted in French technique and Provencal ingredients – delivers a consistently refined experience in a relaxed, welcoming bistro.
