Located on the Route du Languedoc in Aumont-Aubrac, the restaurant offers two distinct tasting experiences. The "Sentier d’Aubrac" menu is a deep exploration of the region, with four starters followed by a main course, cheese, and dessert. The "Laie d’Aubrac" menu offers a more concise journey with two starters, a main, cheese, and dessert. Both are a direct expression of the chef’s modern cuisine, rooted in the local landscape.
Cyril Attrazic’s cooking is animated by the products of the Aubrac. The restaurant’s identity is inseparable from the terroir: the high plateaus, the local breeds of cattle, and the artisan producers who work the land. The chef’s approach is one of generosity and authenticity, letting the ingredients speak while adding his own distinct, personal touch. Dining here is a focused, unhurried affair. The restaurant is open from Friday to Monday, and the atmosphere is one of quiet confidence. Alongside the main restaurant, Cyril Attrazic also runs the bistrot Linette and the brasserie La Gabale, offering more casual takes on his philosophy. But the gastronomic restaurant remains the purest expression of his craft: a celebration of the Aubrac, plate by plate.
