Le Morvan – Modern Cuisine with a Sense of Place

In the heart of the Parc Naturel Régional du Morvan, a short drive from Avallon and Vézelay, Le Morvan offers a dining experience rooted in the landscape. Chef Etienne Robbé runs the kitchen with a quiet passion, turning local ingredients into dishes that feel both precise and generous. His cooking has earned a place in national guides, including the Michelin Guide, which recognises the restaurant for its refined, inventive take on Modern Cuisine.

The dining room is a warm, beamed space that feels more like a country house than a formal restaurant. In warmer months, meals move to the flower-filled garden. The atmosphere is convivial and unhurried – a reflection of the chef’s belief in genuine hospitality.

The Menu: Seasonal and Surprising

Two main menus showcase Chef Robbé’s approach. The Notre Découverte menu (available Wednesday to Sunday) is a four-course affair at €62, or three courses at €54. It opens with a playful Moment d’Amusement, then moves through dishes such as pan-seared gambas with passion fruit sauce and green tea, or a quadrilogy of duck foie gras prepared four ways. Mains might include spiced pike-perch with seaweed sauce and broccoli compote, or a Charolais beef tournedos with blackcurrant nectar and mustard-seed topinambour purée. Local cheeses and a choice of desserts – from yuzu lime cream with matcha to a Caribbean chocolate tart – round out the meal.

For those who want the full experience, the Menu Dégustation Surprise (€82, served weekends and holidays, or by request) is a longer tasting menu that changes with the market and the chef’s mood. A recent version featured Périgord foie gras escalope with elderflower vinegar caramel, Breton scallops in coconut curry, pike-perch with cocoa nibs and vanilla-ginger sauce, and a cocotte-cooked veal loin with Morilles and Guignolet cherries. A cheese cart and house-made sorbets finish the journey.

A Place to Stay and Dine

Le Morvan is also a three-star hotel with eight air-conditioned rooms, each named after local landmarks. The restaurant is open for lunch and dinner, and the chef’s passion extends to the boutique, where guests can buy his own pain d’épices, confitures, and caramels. Whether you come for the food or the setting, this is a place that honours the Morvan without pretence.
