The story
Since 2021, Wendy and Sébastien have been welcoming guests to L'Épine, a restaurant housed in a striking 1866 building that was originally a school. The couple — both Tourangeaux, trained in hospitality, and passionate about wine — have created a space where fine dining feels approachable. Sébastien leads the kitchen while Wendy manages the dining room.
Sébastien’s cooking is grounded in local, seasonal produce, but he also draws on flavours from his travels. The result is modern cuisine that respects its roots while remaining curious. “Une cuisine locale stimulée par des apports exotiques,” as the restaurant puts it – local cuisine sparked by exotic touches. An Omakase menu, inspired by a trip to Japan, changes with the seasons and lets the chef express his personal, singular style. The kitchen prioritises fresh, responsibly sourced ingredients, favouring organic or sustainably farmed produce and minimising waste.
Wine is central to the L'Épine experience. The couple have built strong relationships with vignerons across the Val de Loire over a decade, and the restaurant’s cellar highlights the diversity and quality of the region’s vineyards. Guests can expect a thoughtful selection that showcases local terroirs and the passion of the people behind them.
The dining room also serves as a rotating gallery for urban and contemporary art, adding a layer of visual curiosity to each visit. The quality of the food and the relaxed atmosphere have earned L'Épine a Michelin Bib Gourmand, which recognises good-quality, good-value cooking. It is a fitting nod to a restaurant that balances ambition with ease.
