Here, vegetables take the lead. The team sources directly from farmers across Alsace and beyond, selecting produce from responsible agriculture. Animal products appear sparingly, as a highlight rather than the foundation. Fermentations, brines, drying, and homemade vinegars extend the flavours beyond their natural cycles, giving the plates a distinct sense of place and time. The menu changes with the seasons, following themes that reflect the rhythm of Alsace.
