A Table Born from Childhood Memories

Chef Stéphane Cuzin brings a deeply personal vision to La Table du Marché, the restaurant he founded opposite the covered market in Bergerac. After working in Michelin-starred kitchens in Paris and Brussels, Cuzin returned to his roots, creating a place that feels both intimate and welcoming. “Faire à manger est un geste d’amour,” he writes — cooking is an act of love. The dining room, with its touches of wood, steel, and glass, aims to make guests feel at home, yet somewhere special.

Fire, Rusticity, and the Bistronomic Spirit

Cuzin’s cuisine is built around the element of fire — “le plus ancien des compagnons du cuisinier.” He describes his style as a “bibliothèque culinaire,” a library of culinary heritage, expressed through precise, minute-long sears and bubbling butter. This is cooking that is “rustique,” “entière,” and “volontaire” — wholehearted and unapologetic. The menu changes with the seasons, driven by whatever the market offers, and leans increasingly toward vegetables and produce from the earth. Vegetarians are welcomed with the same passion, with dishes designed to be both healthy and indulgent.

The restaurant’s commitment to authenticity has earned it a Michelin recommendation, a recognition that aligns with its ethos of simplicity and quality. Cuzin describes his cooking as “bistronomique” — unpretentious but never simplistic, a celebration of French gastronomy that lets ingredients speak for themselves.

A Wine List That Tells Stories

The wine program at La Table du Marché is more than a list — it’s a reflection of Cuzin’s relationships with vignerons. The cellar features wines from Bergerac and the broader South West, alongside bottles from the Rhône, Loire, Burgundy, Champagne, and beyond. The focus is on “Propriétaires-Récoltants” — grower-producers — with a strong emphasis on biodynamic and natural wines. Guests can explore the selection by the glass, with the team happy to share the stories behind each bottle. “Le Terroir…” is the guiding principle, connecting drinkers directly to the land and the people who work it.
