Former professional skateboarder Jon Monié and his partner Stéphane Borgne opened the space after Monié completed a tenure at Chez Justine. Their background in fast-paced sports translates into a straightforward service model that prioritizes fresh ingredients over complicated techniques. The menu changes with the seasons while keeping a steady roster of neighborhood favorites.

Standout plates and seasonal produce

Diners often start their meals with a chilled melon soup finished with cherry tomatoes and salt-cured anchovies from Getaria. The vegetable-focused buns offer another reliable option, combining roasted oyster mushrooms with creamy sheep’s milk cheese. A Basque-adapted banh mi fills a crisp baguette with marinated chicken, shredded carrots, cilantro, and a bright lemon mayonnaise. Every component arrives from nearby producers, including vegetables from SICA Bio du Pays Landais and poultry raised by Aldabia. The kitchen also sources slow-grown pork from Ferme Elizaldia, ensuring every protein carries a clear regional traceability.

Spoiler alert! No, this isn’t some new seaside laundromat concept, it’s actually a sleek little eatery just a stone’s throw from the Côte des Basques. Jon Monié (a former pro skater in Paris who previously did a stint at Chez Justine) and his longtime partner Stéphane Borgne serve up locally-sourced, unfussy cuisine (fruits and vegetables from the SICA Bio du Pays Landais, pork from the Ferme Elizaldia, poultry from Aldabia). For lunch, the day we went, seated on the peaceful, sunny terrace: impossibly sweet melon soup with tomatoes and anchovies from Getaria; extremely fluffy vegetarian buns filled with oyster mushrooms and sheep’s milk cheese; bánh mì sandwiches that are clearly more Basque than Vietnamese, combining marinated chicken and really lemony mayo with carrots and cilantro, all stuffed into a baguette. And for dessert, classics like the chocolate almond cookies or banana bread, which we couldn’t help eyeballing on the next table over. // Rose Clince
