The story
L'Entre Deux is the story of two friends, Rémy Escale and Jean, who in 2016 opened the restaurant they had dreamed of as teenagers. The name – “the between two” – hints at the blend of their distinct backgrounds: Rémy, a chef with Michelin-starred experience, and Jean, an industry executive. Together they created a place that reflects their shared values of conviviality, panache and gourmandise.
At 38, Rémy Escale is a chef who combines natural talent with sincerity. After a detour into engineering studies, he followed his childhood passion and earned a CAP in cuisine, then trained at the prestigious Ferrandi school in Paris. With the support of Chef Camdeborde, he joined the brigade of Jean-François Piège at the Crillon, where he spent four years learning at the highest level. Returning to his native southwest, he took the helm at Zoko Moko in Saint-Jean-de-Luz. Within eighteen months he was awarded a Michelin star, becoming – at 26 – the youngest chef in France to receive that honour.
For Rémy, that recognition was less a consecration than a confirmation of his abilities. "Above all, it's the pleasure that must come first when cooking," he says. So when he and Jean created L'Entre Deux, he deliberately stepped away from chasing stars. Instead, he focuses on traditional, generous dishes inspired by childhood memories and the techniques he mastered in starred kitchens.
L'Entre Deux offers a French cuisine that is both rooted and refined – modern in execution but grounded in the flavours of the Basque region and beyond.
