The story
Chef Stéphane Prévalet and his team compose a modern French cuisine rooted in the terroir of the region. At Mets et Vins in Bourg-en-Bresse, they work with fresh, seasonal products, sourcing from local producers whenever possible. The goal is to create dishes you will not find elsewhere—a creative, regional approach that has earned the restaurant a Michelin Bib Gourmand for its good quality, good value cooking.
The menu changes with the seasons, offering a modern, creative, and gastronomic take on classic French cuisine. Guests can choose from several multi-course menus, including the "Éveil des Papilles," the "Escapade Gourmande," and the more elaborate "Expérience Mets & Vins" dégustation. Each is designed to showcase the chef’s skill with local ingredients, from the celebrated poultry of Bresse to the fish of the region.
Beyond the dining room, Mets et Vins opens its kitchen doors for cooking classes. In the "Atelier Mets & Vins," a dedicated space within the restaurant, guests can take possession of the stoves for a course. Options range from two-hour sessions focused on specific techniques—such as sauces, cooking methods, or Bresse chicken—to full-day experiences where you prepare a morning menu and enjoy lunch with the chef, wine included.
