The story
Born in Gausson, in Central Brittany, and raised among farmers, Carro holds two certainties: the product is the foundation, and it is the emotion that guides his craft. After training with Alain Passard at L’Arpège, Olivier Nasti at Le Chambard, and others, he returned to his native Brittany to take the reins of this hotel restaurant.
His modern cuisine is an ode to the harmony of land and sea. The menu reads like a map of the territory: “petit violet” artichokes from Carantec, blue lobster from the Iroise Sea, line-caught tuna from Finistère, and lamb from the Monts d’Arrée. Dishes such as the Guilvinec langoustine with sesame and ume, or the roasted veal with black garlic, show a rigorous hand with seasoning and texture. The Michelin guide praised his “finesse and delicacy, enjoyable plays on texture, precise cooking and seasoning.”
Carro also offers immersive evenings and cooking workshops, and the dining room opens onto a panorama of the peninsula, reinforcing the sense of place. Every detail—from the forms and colours on the plate to the sourcing from local farmers and affineurs—is deliberate. As he puts it: “No detail is a detail.”
