The story
Le Moulin de Ponceau occupies a 17th-century watermill on the banks of the Eure in the heart of Chartres. The building’s large windows open onto the river and the city’s historic monuments, while a terrace offers a poetic setting for warm-weather meals. It is the only restaurant in Chartres with such a privileged waterside position.
The adventure began in 2019 when Stéphane, Mickaël and Franck fell under the spell of the old mill. Stéphane brings a career in high-end restaurant management in Paris and Strasbourg; Mickaël honed his service in Michelin-starred houses; Franck is an unconventional pastry virtuoso. In 2024, chef Jean-François Sadones joined the team – a return to his childhood haunt, now realised as head chef. Self-taught and passionate, he composes audacious, modern recipes that elevate local produce.
The kitchen balances tradition and modernity, exploring subtle flavours and original associations. The menu changes with the seasons, drawing on short supply chains and regional artisans. The restaurant holds the 3 Écotable label and the title of Maître restaurateur, reflecting a commitment to sustainable gastronomy. The result is sincere, refined modern French cuisine that remains accessible.
Le Moulin de Ponceau is listed in the Michelin guide as Recommended, and also appears in Gault & Millau. The team shares this recognition with pride, seeing it as confirmation of their daily pursuit of taste and beauty.
