The story
In the small town of Delme, in the Moselle department of northeastern France, the family-run À la 12 has been a fixture since 1954. Today, the third generation—Thomas and Laura François—runs the house, bringing a fresh, focused energy to the kitchen and dining room. Their approach is built on a simple philosophy: let the ingredients speak. The restaurant has earned a place in the Michelin Guide for 2026, a recognition that underscores the precision and sincerity of their work.
Thomas François spent five formative years working alongside the Bras family in Laguiole and Rodez, an experience that shaped his understanding of how to let nature guide the plate. At À la 12, he cooks with a directness that prioritises taste over technique. The menu changes with the seasons and the market, and the team’s commitment to freshness is literal: they grow their own vegetables, herbs, and edible flowers at La Perhotte, a plot just minutes from the restaurant.
The dining room, renovated in early 2025, is clean and light-filled, with a view over the aromatic garden. A glass-walled wine cellar adds a warm, tactile presence. Laura coordinates the front of house, guiding guests through a well-chosen selection of wines to accompany their meal.
À la 12’s cooking is grounded in the seasons. The carte evolves constantly, but the restaurant’s most distinctive offering is the Menu Végétal, a dedicated plant-focused menu that has run for eight seasons. Each month between April and October, Thomas creates a new four-service menu built around produce from the potager. The menu is not exclusively vegetarian—he often adds a touch of meat or seafood for contrast—but the vegetables are always the centrepiece.
The kitchen’s style is frank and clean. Aromatic herbs, edible flowers, and spices are used to create surprise without obscuring the main ingredient. The team makes their own ice creams and sorbets, and the attention to detail extends to every element on the plate. Thomas describes his process simply: “I try, I taste, I adjust. If I’m not satisfied, I start again. For me, that’s cooking.”
À la 12 is very much a family project. Laura and Thomas met while travelling and working abroad—in remote corners of Moselle, the Drôme, and England—before returning to take over the family business. They have built a young, dynamic team united around shared values. The result is a restaurant that feels both rooted in tradition and quietly forward-looking, where the focus is squarely on what ends up on the plate.
