The story
In the quiet village of Cormery, in the heart of the Loire Valley, Les Roseaux Pensants is the realization of a dream born in 2018: to live from a passion for cooking and for the vegetable kingdom, grounded in an unwavering commitment to sustainable, responsible gastronomy. The restaurant’s name, a nod to Blaise Pascal’s “thinking reed,” signals a place where thoughtfulness guides every decision, from the plate to the planet.
The kitchen here is built on deep, daily relationships with over thirty producers, artisans, winemakers, farmers, and fishermen across Indre-et-Loire and the broader Centre-Val-de-Loire region. Nearly all ingredients travel in short loops, a practice that honors those who dedicate their lives to feeding us and shapes a Modern Cuisine that is truly rooted in its terroir.
Vegetables are the heart of the story. The team is convinced of the powerful potential of plant-based cooking for today and tomorrow, and they celebrate aromatic and medicinal herbs, grains, and legumes—crops that flourish in Touraine. While the menu does include meat and fish from local sources, the restaurant champions a universal vision of vegetarian and vegan cuisine, offering a vegetarian option from starter to dessert every day.
This dedication has not gone unnoticed. Just ten months after opening, Les Roseaux Pensants earned three Ecotable—the highest mark from France’s first sustainable restaurant label. In 2024, it ranked fourth nationally in the Ecotable Trophies in the “locavore” and “short circuit” categories. In 2025, the restaurant received the Michelin Green Star, a clear sign of its daily commitment to a sustainable gastronomy. Michelin also recommends the restaurant.
The dining experience is offered through a short, frequently changing carte. Guests can choose from the Herbae menu in three formats: 4 pensées (€55), 5 pensées (€68), or 7 pensées (€85), available at all services. The food is best enjoyed knowing that the team has prepared everything in advance of service, so any dietary restrictions—including a fully vegan meal—should be shared at the time of booking.
Beyond the dining room, the team shares their passion through workshops on vegetables, grains, fermented drinks, and aromatic herbs, and they run a casual guinguette, Les Saules, open Thursday to Sunday evenings without reservation. Les Roseaux Pensants is a place where eating well and eating responsibly are one and the same.
