The story
At the edge of the prestigious vineyards of Chassagne-Montrachet, just outside Corpeau, the restaurant Ed.Em offers a distinctly personal take on modern cuisine. The name itself is a contraction of the first names of its creators, Émilie Rey and Chef Édouard Mignot, and their partnership defines every aspect of the experience.
Here, the cooking is driven by the seasons and a deep respect for local Burgundian ingredients. Chef Mignot works with finesse, revisiting classic dishes with spontaneous, flavor-first combinations. Many of the key ingredients travel less than thirty kilometers, grounding each plate in a very specific, local story. The result is a cuisine described as refined and emotional—qualities that earned Ed.Em a Michelin star.
The restaurant’s location is no accident. It was born from the collaboration of emblematic local winemakers, and that heritage runs deep. The wine list is a living connection to the great terroirs of the Côte de Beaune, working directly with legendary domaines like the families Colin, Bernard Morey, and Morey. It is an ideal setting to explore the aromatic complexity of the region’s finest white wines alongside the chef’s precise cooking.
Ed.Em is part of a trio of ventures from the team, which also includes La Cabane—a chic, “picnic-spirit” bistro open seasonally in the local park—and Le Petit Chêne, the on-site bakery, pastry, and chocolate shop where the restaurant’s desserts can also be taken away. But it is at the Michelin-starred table of Ed.Em where the full expression of Édouard and Émilie’s vision comes to life.
