Renée: A Grandmother’s Legacy on the Dunkerque Coast

A few steps from the Malo-les-Bains dyke, chef Charles Bruneval has opened the restaurant he always dreamed of. After a decade cooking at the Parisian addresses of Michel Rostang, Guy Savoy, and Thierry Marx, he came home to Dunkerque. The result is Renée, named for his grandmother, who taught him the art of gathering people around a table with generosity and good ingredients.

“I want to recreate the warmth of a family home, where everyone leaves with a peaceful stomach and a light heart,” Bruneval says. His cooking is a return to his roots, built on wild produce, game, and old-fashioned recipes refined by the technique he learned alongside the great names of French gastronomy. There is no flashiness here—only sharp skill in service of carefully sourced ingredients.

The menu follows the seasons and the territory. The smoky potato emulsion, a signature of the house, nods to the traditional smoked cuisine of Dunkerque. The kitchen draws from the richness of the Hauts-de-France, working with local fishermen, the Boucherie Lesage for meat, and nearby market gardeners. Each plate tells a story of place.

The dining room is an intimate setting with smoked-green walls, solid oak tables made to measure by Table à Part in Tourcoing, and unique ceramics from Poterie Sauvage. Bouquets from La Pensée add freshness, while the menus slip into hand-stitched leather covers. It is a space where local craftsmanship and gastronomy meet.

The wine list matches the same exacting standard. Bruneval selects bottles directly from vineyards, balancing classics with finds from independent growers. Alongside Burgundy references like Tollot-Beaut and Mongeard-Mugneret, Champagne choices range from grand houses to confidential growers, including a sparkling wine from the emerging Cambrésis region.

Renée’s recognition has been swift. It entered the Michelin Guide in 2025 and was awarded the Bib Gourmand in 2026, cementing its place among France’s best tables. The restaurant has also been named a Jeune Talent by Gault & Millau and labelled Artisans Militants de la Qualité.

This is a place of conviction: a chef cooking the food of his life, in the city he calls home.
