The story
Lo Pichotòme serves organic pizza in Forcalquier under the direction of Manuel Barthelemy. After collecting awards across France and abroad, the baker installed a custom Ephrem oven that spins slowly over an open flame, a detail that earned the kitchen a recent listing in Le Fooding. This rotating wood-fired design ensures even heat distribution while honoring his commitment to ethical production. Every dough starts from scratch before meeting sun-kissed ingredients and seasonal herbs.
The menu highlights simple toppings that let regional produce take center stage. A vegetarian pizza arrives topped with sun-dried cherry tomatoes, balsamic caramelized onions, fresh sheep’s cheese, and a bright mint sauce alongside fresh arugula. Guests often start with warm focaccia or flatbread accompanied by house-made mezze like gazpacho, tapenade, and eggplant caviar. Sweet finishes include a rich chocolate-nocciolata tart or a slice of ginger panettone baked fresh each morning.
Local carpenters constructed an expansive eco-friendly terrace designed with sustainable materials. Families and friends gather here during lunch hours or stay late for the Pizza Sound System evenings. Live music accompanies the slow rotation of the baking chamber as guests watch their meals spin into crispy perfection. The venue accommodates both casual takeaway orders and seated meals throughout the day.
