At Le Cin5, Chef Vincent Deforce crafts a cuisine that defies expectations. This Michelin one-star restaurant, located within the Au Cœur du Village hotel in La Clusaz, is a place where the robust flavors of the Savoyard terroir meet the vibrant spices and products of Mauritius. The result is a gastronomic experience that is both rooted in its alpine home and refreshingly exotic.
The concept begins even before you see a menu. Upon entering the Jardin d’Hiver, all five senses are engaged. The menu itself is presented as a series of riddles and raw ingredients under cloches, with the full story only revealed at the table. This element of surprise is built on a foundation of trust, turning each meal into a discovery.
Chef Deforce’s path to this point is a story of passion and dedication. After studying hotel management, he found his true calling in the kitchen, working his way up from pastry commis to head pastry chef. A formative stint in Mauritius left a lasting impression, and he now brings those inspirations back to the mountains. Since 2020, he has been the executive chef for both Le Cin5 and its sister restaurant, Le Coeur. In 2024, his creative vision and commitment to quality were recognized with a Michelin star.
The kitchen's philosophy is one of balance. Local products are paramount, sourced with care from the region. Cheese comes from nearby farms and the affineur Maison Paccard in Manigod, while the wine list highlights Savoyard vintages, many from biodynamic producers. Even the bread is often baked in-house. These local treasures are then paired with ingredients from Mauritius, creating a dialogue between the alpine and the tropical. This is fine dining that is both responsible and adventurous, a true reflection of the chef’s journey and the unique character of La Clusaz.
