The story
On the heights of La Trinité-sur-Mer, L'Azimut has been a restaurant since 1965. Since 2005, chef Rudy Deniaud and Véronique Deniaud have made this warm, elegant house their own, welcoming guests with what they call an "élégante convivialité." The restaurant describes itself as a "pépite"—a nugget whose address you keep to yourself. It is recognized by the Michelin guide, a Recommended address that rewards its distinct character.
Rudy Deniaud’s cooking is instinctive. He describes his kitchen as one in constant balance between tradition and modernity. He deconstructs and reinvents, but his primary concern is always le vrai goût: the true taste of seasonal products. This is a modern cuisine that pays homage to two sources: the sea and the garden, and to the producers who supply the best vegetables.
The à la carte reflects this. A piece of beef is grilled in the fireplace. A noble fish is roasted with pea and carrot crayons, an emulsion of lard and a Pata Negra crisp. Lobster is shelled and bathed in its own broth with seasonal vegetables. The menu changes regularly, with options like the "Menu au Gré des Marées" (at the whim of the tides) that changes daily to highlight local produce.
L'Azimut is a place for lunch or dinner, with a private room for private parties, and an interesting wine list to match the chef's instinctive, market-driven cooking.
