The story
Claire et Hugo brings a grounded bistro approach to Liffré, built on six years of mobile cooking across the region. Claire Baubrit and Hugo Lallemand traded their burger truck for a renovated dry cleaner’s space that now operates as a full service restaurant and neighborhood pantry. They bake five distinct loaves each morning using organic and heirloom grains sourced locally. Recognized consistently by Le Fooding since their early days, the pair keeps the operation lean and focused on seasonal ingredients.
The French bistro serves a straightforward path through their rotating selection of savory courses. Diners often start with smoked herring paired with crisp leeks, green grapes, and a mustard yogurt drink infused with garden citrus oil. Tender octopus follows a similar pattern, resting alongside a harissa peanut and basil sauce. Sweet endings like ginger poached plums with hazelnut shortbread or a blueberry financier topped with verbena cream complete the progression.
Outside seating occupies a spacious terrace that catches afternoon light throughout the warmer months. A dedicated greenhouse houses citron, kaffir lime, and Buddha’s hand trees, supplying fresh zest directly into the kitchen prep. The adjacent garden and orchard provide seasonal produce that changes the weekly specials without warning. Guests eat within sight of these growing spaces, which keeps the cooking process transparent and rooted in the soil.
