The story

Arthur Friess learned his craft in some of Paris’s most respected kitchens, including the Royal Monceau under Roberto Rispoli and the Plaza Athénée with Alain Ducasse and Romain Meder. At Le 26-28, he translates that experience into light, sensory, and savoury dishes that honour the ingredients without fuss.
