In the heart of Lorient, Louise is the expression of chef Julien Corderoch’s deep-rooted connection to the Brittany coast. The restaurant, named after his great-grandmother, is a project born from years of training alongside Michelin-starred chefs like Jean-Paul Abadie and Jérémy Le Calvez. It’s a return to his origins, serving a cuisine that is both personal and precise.
The cooking at Louise is distinctly marine. Corderoch’s style is defined by acidic, tart, and saline flavors, with a menu focused exclusively on fish and vegetables. The goal is simplicity, purity, and a deep respect for the local terroir. This philosophy, combined with a warm, welcoming atmosphere, earned the restaurant a Michelin star, a recognition of its high-quality, eco-responsible approach.
Working alongside chef Youenn, the kitchen explores new combinations while staying true to Corderoch’s identity. Their shared passion for minimalism is evident—Youenn’s preference for working with just one or two products per plate ensures each ingredient speaks clearly. The open kitchen lets guests watch the plates come together, reinforcing the sense of being welcomed into a home.
Dishes like the incredible oyster with Dashi and a quenelle of sour cream, or the celebrated raw mullet with coconut milk, ginger, lemongrass, and Blue Meat radish, showcase this modern cuisine at its best. A carpaccio of mullet, presented in a shell-shaped dish, is elevated by Ponzu sauce, hazelnut oil, and compressed cucumber. The marinated red mullet, burned with a blowtorch, is paired with fermented beetroot, goat cheese from Kérouzine, and an olive powder.
In the dining room, Anne-Laure manages the service with composure, while the chef regularly steps out to connect with guests. Louise offers a singular, authentic, and identitarian dining experience in Lorient, where the focus is always on the plate, the product, and the pleasure of sharing a meal.
