The story
In the South Vendée, halfway between Fontenay-Le-Comte, La Rochelle and Les Sables d'Olonne, Au Fil des Saisons offers a calm and refined escape. The restaurant and hotel, taken over in 2006 by Laurent and Audrey Soulard, sits at the entrance of Luçon, a short drive from the Atlantic coast.
The dining room seats 40 guests, with an additional 22 places on the terrace. The kitchen, led by chef Laurent Soulard, focuses on fresh, quality ingredients, changing the menu with the seasons. The cooking is described as combining "Traditions" and "Discoveries," with a promise of astonishing flavors and refined, fragrant dishes. This commitment to quality has earned the restaurant a Michelin Recommendation, a recognition of its consistent, high-standard cuisine.
The atmosphere is welcoming and serene, with a garden, veranda, and a swimming pool open from 9:00 a.m. to 8:00 p.m. for hotel guests. The six hotel rooms are decorated with different themes, each offering a lounge area, high-speed wifi, and a hairdryer. The restaurant’s terrace, overlooking the garden, is a particularly pleasant spot for a meal on a warm day.
Whether for lunch or dinner, the menu at Au Fil des Saisons is built around the freshest produce available. The cuisine is contemporary French, with a clear focus on seasonal ingredients. The restaurant is open for lunch Tuesday through Saturday, and for dinner on Tuesday, Wednesday, and Saturday. The team is attentive and the service professional, creating a dining experience that is both relaxed and memorable.
