The story
In the heart of the old village of Marseillan, between Agde and Sète, La Table d’Emilie occupies a beautifully restored listed building on Place Carnot. Chef Thomas Sanvoisin leads the kitchen, where the focus is on quality produce and creative recipes expressed through modern cuisine.
The restaurant offers several distinct spaces. Inside, guests can choose between a historic vaulted dining room and a more contemporary salon. Outside, a patio and a terrace provide a quieter setting. The atmosphere is described as calm and convivial, suited for both family meals and dinners with friends.
The cooking is driven by delicate flavour combinations and precise technique. The menu changes with the seasons, drawing on fresh, high-quality ingredients. Dishes such as aile de raie, raviole moules de l’étang et crevettes grises (skate wing with pond mussel ravioli and grey shrimp) point to the kitchen’s skill with seafood and local produce. Lamb and turbot also feature prominently. A dedicated sommelier is on hand to recommend wine pairings from a carefully selected cellar.
La Table d’Emilie has earned a Gault & Millau Table de Chef title and is Michelin Recommended—a recognition that underscores the consistency and ambition of the cooking. In summer, the restaurant opens La Parenthèse d’Émilie, a seasonal terrace on the covered square opposite, serving lunch Tuesday through Saturday.
