The story
At La Forge, everything begins with the ingredient. The team selects, respects, and transforms each product with exacting care, drawing from a living terroir supported by committed producers. The menu changes with the seasons and the chef’s inspirations, never static.
Fire is the founding element of the house, guiding cooking methods that reveal textures and underline flavours. To this raw material, chef William Blondel brings the influence of Asia, creating a cuisine of precision and balance where acidity meets depth, sweetness soothes tension. The result is modern cuisine that prioritises equilibrium over spectacle, each gesture deliberate.
The welcome is sincere and attentive, with service that accompanies each moment discreetly and precisely, respecting the rhythm of each guest. The dining room offers outdoor seating and a private room, and the restaurant is wheelchair accessible.
La Forge offers several tasting journeys: the weekday lunch menu DAO (2 or 3 courses), the more extensive URUMI (3 to 5 courses), the seven-course ODACHI with optional wine pairing, the three-course MIDORI, and a children’s menu KODACHI. Breads and desserts are made in-house daily, and the cellar features French wines from all appellations.
The Michelin Guide has awarded La Forge a Bib Gourmand, highlighting its careful cooking at moderate prices. This accolade reflects the restaurant’s commitment to quality and value, making it a destination for those seeking refined modern cuisine in the heart of Mayenne.
