Since April 2010, Isabelle and Nicolas Nobis have welcomed guests into their contemporary dining room on Boulevard Paul-Lintier in Mayenne. The space is intimate—up to 25 covers—with warm wood accents that frame a carefully considered tasting experience. The name, L'Éveil des Sens, promises an awakening, and the cooking delivers on that pledge.
Chef Nicolas Nobis brings more than two decades of experience to the stove. His approach is built on a straightforward philosophy: simple and good. That means letting the product speak. He works closely with local, often organic producers in the Pays de la Loire region, selecting ingredients at their peak and treating them with a light, inventive hand. The result is modern cuisine that feels grounded rather than fussy.
