The story
In the small village of Beaumettes, at the foot of the iconic Gordes, Domitia – Maison de Cuisinier offers an intimate, warmly personal dining experience. Chef Jérôme Faure and his wife Laurence opened their doors in May 2021, creating a restaurant that balances warmth, simplicity, and refined cooking. The name pays homage to the Via Domitia, the ancient Roman road that once passed by the stone building.
Jérôme Faure’s passion for cooking began in childhood. After training at the Grenoble hotel school and honing his skills at prestigious establishments such as La Pyramide in Vienne (two Michelin stars) and the Waterside Inn in England (three Michelin stars), he earned his first Michelin star in 2008 at Corrençon-en-Vercors. In 2015, he became Executive Chef at Domaine de Fontenille in the Luberon, reclaiming a star in 2017. His cuisine is described as audacious, refined, and deeply rooted in the best produce.
The interior of Domitia is adorned with frescoes by local painter Hervé Thibault, whose work also decorates the celebrated Cour des Loges hotel in Lyon. The murals, inspired by Ancient Rome, transform the dining room into a quiet, artistic space. The restaurant’s farm-to-table approach and outdoor seating make it a natural fit for the Luberon landscape.
Domitia’s lunch menus change weekly, showcasing the chef’s creativity and respect for ingredients. Recent offerings have included a celery tonnato with confit Mediterranean tuna belly and caper jelly, a creamy artichoke preparation with a lard brioche, and Breton monkfish with a warm shellfish vinaigrette. Desserts often reference childhood memories—such as a Savoy cake with meadow-sweet anglaise and pink praline ice cream, or a trembling Campari grapefruit gelée with fresh cheese sorbet.
The restaurant has earned a Michelin Recommended distinction, marking it as a destination for those seeking authentic, high-quality French cuisine in the heart of Provence. The combination of Chef Faure’s stellar track record, the warm hospitality of Laurence, and the intimate, frescoed setting makes Domitia a genuinely memorable place to dine.
