The story
Since 2006, Le Farçon has held a Michelin star, a recognition that speaks to the consistency and creativity of chef Julien Machet. Perched at 1,400 metres on the snow front of La Tania, in the Courchevel area of the Three Valleys, the restaurant offers a warm, modern Savoyard setting. Machet describes his approach as that of a “colporteur savoyard” – a travelling merchant of old – inviting guests on a gustatory journey through the history of the Grand Duchy of Savoy.
His modern cuisine is deeply rooted in the Alpine terroir, with a creative process that is “always in motion.” The menus change with the seasons and are built around three itineraries: La route des Tommes, La route du Sel, and Le Grand Chemin. Each path explores different facets of Savoyard gastronomy, from local cheeses to cured meats and mountain herbs, with influences reaching into Piedmont, Valais, and even Sardinia.
Machet’s ambition is to make fine dining “comprehensible and accessible to all, without elitism.” The result is a place where the precision of a Michelin-starred kitchen meets the warmth of a mountain inn. Whether for lunch or dinner, the experience is about rediscovering forgotten flavours through fresh, local produce – a genuine taste of the Alps, served with a sense of history and generosity.
