The story

Au Grand Sérieux in Nancy: A Le Fooding Recognized Bistro

The Kitchen and Its Foundations

Antoine Anclin founded Au Grand Sérieux as a neighborhood bistro in Nancy back in 2012. He applies precise techniques learned at Chapel and Senderens to everyday cooking. The team collects ingredients each morning from the covered market directly across the street. This routine keeps the menu tied to local harvests rather than fixed formulas.

Seasonal Plates and Evening Rituals

Daily selections appear scrawled on a blackboard near the entrance. A typical lunch might feature grilled zucchini and carrot ribbons tossed with fresh mozzarella and toasted pine nuts. Roasted suckling pig ham pairs with a warm potato casserole, flat beans, and caramelized red onions. Thursday evenings host a steady flow of tapas starting at six thirty, while Friday dinner operates as a single evening service at eight o’clock.

The Dining Room Ambience

Fifties design elements anchor the space. Wooden benches run parallel to walls lined with classic Thonet chairs. A zinc topped bar sits above aged terrazzo tiles that show years of foot traffic. The unpretentious arrangement encourages lingering conversations among neighbors who value straightforward bistro cooking. Recent recognition from Le Fooding simply validates what the community has known for over a decade.

Wooden benches, legendary Thonet chairs, a classic zinc-topped bar, old terrazzo tiles… The fifties décor acts as the very serious backdrop for Antoine Anclin’s cuisine (ex-Chapel, Senderens), which the people of Nancy have been enjoying since 2012. Scribbled out on the blackboard, the day we went for lunch the market menu (sourced from the covered market, located right across the street) featured: a gigantic summer salad of zucchini, carrot, mozzarella and pine nuts; juicy roasted suckling pig ham with plenty of red onions, a potato casserole, carrots, flat beans and clover; before some divine cherries roasted in port and served with a spoonful of whipped cream. On Thursday evenings apéros start at 6:30pm with a parade of tapas, and on Fridays, they serve the only dinner of the week at 8 o’clock! // E.D.
