Guests regularly encounter chicken and beaufort cheese ravioli followed by a wild boar loin served with fermented porcini mushrooms. Thursday and Friday evenings transition into smaller formats like silky vitello tonnato layered with a sharp bonito cream or a bright vegetable gazpacho. A brick wall, a long zinc bar, lipstick red banquettes, Michel Tolmer posters… The rumbling sound of the cobblestones on Place Stanislas aren’t the only thing vibrating in Nancy! Ever since 2018, Florian Peraté (ex- Aux Crieurs de Vins in Troyes) and Antoine Grüner (a former Italian wine dealer) have been delighting crowds in Nancy by pairing their polyglot wines with high voltage plates by Théo Mareschal (ex-Maison dans le Parc). The latter unveiled a fixed-price lunch menu in exchange for a 20-euro bill, featuring the likes of: chicken/beaufort ravioli, a wild boar filet mignon with fermented porcini mushrooms, then a fennel/clementine tartlet. But that’s not all! On Thursday and Friday nights, his beautiful plates give way to tapas: silky vitello tonnato with a bonito cream; fabulous gazpacho; a tiramisu-esque whipped cream with crumbled Breton shortbread cookies… One last tip: it’s worth trying the stew of the week, served on Saturdays at lunch – think chicken with a porcini mushroom cream sauce… // R.deC.
