The story
La Mandale opened in July 2019 in the heart of Nantes, and from the start its mission has been clear: local and seasonal cuisine, served in a friendly, bistronomic atmosphere. The restaurant’s own description says it best: “creative cuisine blending ultra-local produce with Asian influences, with particular attention paid to the quality and freshness of ingredients.” That same care extends to the drinks – natural wines, local beers, ciders, and non-alcoholic options.
The kitchen is led by Léo Huet, co-creator and chef, while Maximillien Degroise, his partner, manages the dining room and wine list. Together they have built a place where the flavours are both unexpected and honest. Guests have called it “a symphony of flavours” and praised the “original, honest, well-balanced flavours.” The dedication to sourcing from nearby producers is evident in every dish.
This commitment to quality and value has earned La Mandale a Michelin Bib Gourmand – the guide’s recognition for “good quality, good value cooking.” It is a fitting nod to a restaurant that delivers refined, creative cuisine without pretension, in a relaxed setting.
Beyond the founders, the team includes Kevin Southichak (versatile kitchen second), Clara Audoin (multi-skilled assistant chef), and Pauline Salasc (trainee sommelier). Their collective energy brings the menu to life, rotating with the seasons and what the local land offers.
La Mandale is open for lunch and dinner Monday through Friday (closed Monday noon and Wednesday evening). With outdoor seating available in warmer months, it is a spot where the focus stays on the food, the wine, and the company.
