The story

Le Mirza in Nantes: Creative Bistro Cuisine and Neo-Retro Charm

The kitchen and the team

Le Mirza in Nantes delivers inventive bistro cuisine where chefs Julien Moniz and Maxime Delalande run the kitchen, bringing a partnership forged during their earlier time together at Le Brocéliande. François Rouillé manages the front of house and wine service, completing a trio built on long-standing friendship. Their approach to bistro fare blends precision with a relaxed energy, evident in how they balance the technical demands of complex flavors against the casual neo-retro setting. The menu reflects a willingness to experiment, drawing inspiration from diverse culinary traditions while maintaining a cohesive identity.

Flavor and technique

The bar area showcases dishes that merge unexpected textures and bold pairings. Warm flatbread topped with button mushrooms, kimchi, and a layer of smoked tomme cheese offers a rich start to the meal. Other preparations highlight careful balancing, such as a shallot and miso tarte tatin served alongside raw cream and chopped spring onions. A flame-charred mackerel arrives with a creamy sauce made from smoked mackerel bones, accompanied by crisp celery and bright kiwi. Desserts continue the theme of contrast, featuring diced pear hidden beneath a swirl of Japanese mizuna sorbet and delicate meringue shards.

The space

The interior embraces a neo-retro aesthetic defined by casson mosaic tile floors and a bar counter finished with Formica. Guests sit at classic bistro tables surrounded by distinctive palmette chairs, creating a room that feels both historic and comfortably informal. The layout encourages a social dynamic suited to counter dining and sharing small plates among friends. Every detail in the decor reinforces the group's desire to offer a welcoming environment where the focus remains on high-quality bistrot cooking and spirited conversation.

Have you seen Le Mirza? If we were you, we’d head back to the farmers’ market in Talensac… That’s because François Rouillé (front of house / sommelier), Julien Moniz and Maxime Delalande (in the kitchen), who became friends during their time at Le Brocéliande, combine good drinks and good food there in their neo-retro joint complete with casson mosaic tile floors, a Formica-topped bar, bistro tables and palmette chairs. Anyways, the night we went, the plates served at the bar were pretty damn impressive: divine flatbread served warm and covered in button mushrooms and kimchi under a veil of smoked tomme cheese; incredible shallot and miso tarte tatin served with raw cream sprinkled with spring onions – or, eyeballed on the next table over, flame-charred mackerel with smoked mackerel bone cream, plus celery and kiwi… Before a stunning finale: diced pear camouflaged under Japanese mizuna sorbet and meringue. // Lester Grossman
