The story
At 15 rue des Hauts-Pavés in Nantes, brothers Charles and Tristan Bernabé have opened a restaurant that speaks directly to the seasons. Both chefs came from kitchens like Frenchie and Maison d'à Côté, and at Les Cadets they bring that experience to a warm, welcoming space. The cuisine is modern, local, and iodé—with a clear focus on seafood and the best of the surrounding terroir.
There is no à la carte. Instead, Les Cadets offers a single menu that changes every week, built around what local suppliers have just brought in. At lunch (Tuesday to Friday, 36 €) you get a concise expression of that week’s produce. For a deeper experience, the Carte Blanche unfolds in five or seven services (85 € and 105 €), giving the chefs free rein to compose a longer, more intricate meal. The kitchen is also happy to adapt for dietary needs or allergies.
The wine list is carefully chosen to match the food, with a wide selection available by the glass or bottle.
In 2026, Les Cadets was awarded a Michelin star for high-quality cooking. The recognition fits naturally: the cooking is precise, the ingredients are respected, and the flavours are clear. The restaurant’s modern cuisine does not chase trends—it follows the rhythm of the seasons and the character of the Loire-Atlantique region.
The dining room is described as a “lieu chaleureux”—a warm place. Service is attentive but relaxed, and the open kitchen lets you see the team at work. Outdoor seating is available when weather permits. Les Cadets is open for lunch and dinner from Tuesday to Friday, closed on weekends and Monday.
