For a fuller experience, the Menu Océanide (€69) features langoustines roasted with fresh morels, then a choice of roasted Saint Pierre or veal quasi, finished with poached rhubarb and praline rose. The Menu Dégustation (€99) – served to the whole table – adds foie gras and crab to the sequence, a confident parade of the kitchen’s strengths.
