A Bold, No-Menu Dining Experience

In the heart of Nantes’ creative district, near the Machines de l’Île, LuluRouget has made its mark with a refreshingly direct approach to Modern Cuisine. Chef-propriétaire Ludovic Pouzelgues, a Nantes native, opened his own restaurant in April 2012 after an illustrious career — including formative years at the three-Michelin-starred Maison Troisgros in Roanne. His goal was simple: to cook without a fixed carte.

At LuluRouget, the menu changes daily. At lunch, the “Les Yeux Ouverts” (Eyes Open) menu is served, while dinner introduces the pioneering “Les Yeux Fermés” (Eyes Closed) concept — a tasting format unique to the city. The team works with fresh, often local products and a strong seasonality, placing trust in the ingredient and the moment. Prices are clear and fixed, with multi-service dégustation options ranging from three to seven courses.

From the Chef’s Background

Pouzelgues’ path is instructive. After topping his professional culinary baccalaureate in 2000, he polished his skills in Michelin-starred houses across the Loire Valley, notably under Jean-Yves Guého at L’Atlantide in Nantes. The crucial turn came when he joined Michel Troisgros, whose influence — particularly a pronounced taste for acidity — deeply shaped his cooking. Returning to Nantes, he poured that rigor into LuluRouget, a restaurant he describes as “brute, simple et incisive.”

A Michelin Star and Industry Recognition

The work paid off. In 2019, LuluRouget earned a Michelin star, an award confirmed every year since. The guide also recognized the restaurant with a “Young Talent” prize, and Gault Millau has given it three toques and a 15/20 score. In 2021, Pouzelgues was made a Chevalier de l’Ordre National du Mérite; in 2022, he was a finalist for the prestigious Meilleur Ouvrier de France competition. His 2023 book, Un Cuisinier en ville, documents his urban-cook philosophy.

Seasonality and Simplicity

The kitchen’s philosophy is rooted in seasonality: “des produits frais et le plus souvent locaux, une saisonnalité, des cuisiniers passionnés et un service dévoué.” There is no sprawling menu — only a single, evolving proposition that lets the team express itself freely. A short but interesting wine list and a dedicated service complete the experience.

A Welcoming Space

The restaurant is open for lunch Thursday through Saturday, and dinner Tuesday through Saturday. With air conditioning, an outdoor terrace, and wheelchair access, it accommodates a range of dining occasions, from private parties to a quiet seasonal meal in the city.
