The story
Situated on Place de la Monnaie, Roza is the Nantes project of chef-owner Jean-François Pantaleon. The restaurant’s name is a family creation, blending “Ro” from Romane and “Za” from SuZAnne. Pantaleon, a native of the Pays de la Loire, spent years cooking in starred kitchens — Le Castel Marie Louise, La Mare aux Oiseaux, Anne de Bretagne, and then Le Meurice and Apicius in Paris — before opening the Parisian restaurant Coretta in 2014. In November 2017, he returned west, opening Roza and earning his first Michelin star. Today, Roza holds a Michelin Recommended distinction, a quiet nod to its ongoing consistency.
The cooking is instinctive and driven by the seasons. Pantaleon and his team work with local producers, building partnerships that often reach beyond the restaurant itself. Lunch menus start at 24 euros, while the evening tasting menu — available Monday through Friday at 40 or 45 euros — changes weekly. A recent dinner began with grilled octopus and Brussels sprouts in a smoky lard marinière with XO sauce, followed by a lamb gigot with confit root parsley, blood orange, and sage jus, and finished with a mimosa dessert of honey ice cream, gastrique, and pollen crumble.
Among the house signatures, two dishes stand out: a crisp, caramelised ris de veau, and the restaurant’s legendary mille-feuille — a fixture since opening day. The à la carte menu is also renewed each week.
Roza is housed in a charming, light-filled space on the ground floor of a historic building. The interior is both elegant and welcoming, a setting that works equally well for a business lunch, a private event, or a quiet dinner. The team, whether in the kitchen or the dining room, is described as attentive and genuine. In good weather, outdoor seating is available. The restaurant also offers takeaway, gift vouchers, and privatisation for groups of 10 to 40 guests.
