From family farm to table

Sain is the story of two brothers, Samuel and Josselin, born into a family of market gardeners in Guérande, Brittany. Their name is a contraction of their own. Their restaurant in Nantes is a direct extension of that lineage: a place where the distance from soil to plate is measured in kilometres, not food miles. "De la terre à l'assiette" is their philosophy, and they live it daily with produce sourced from the family organic farm, Huitric Producteur.

A trinity of spaces

Sain functions as café, canteen and épicerie all in one. At lunch, the kitchen turns out a savoury, balanced, entirely homemade cuisine that changes with the seasons. In the evenings (Tuesday through Thursday), dinner service takes over. The cooking is rooted in modern cuisine, with an emphasis on vegetables and a zero-waste approach. Michelin has awarded the restaurant its Recommended distinction, a nod to the precision and integrity of this farm-driven cooking.

The épicerie

Beyond the dining room, the épicerie stocks local products: vegetables, eggs, preserves (savoury and sweet), spices, coffee, teas, infusions, and a curated selection of natural wines. It's an invitation to take a piece of the farm home.

Sain wears its values lightly. No preaching, just good produce handled with care. The result is a meal that feels both comforting and deliberate – grounded in the Breton landscape and the brothers' heritage.

Sain? It’s a bistro with a marbled facade, bare walls and Tolix chairs, where the Huitric brothers combined their two first names, Samuel (front of house) and Josselin (in the kitchen), which also happens to mean “healthy” in French. These two local kids – from a four-generation family of market farmers in Guérande – know all about locally-sourced eats: bread from Painbar, cheeses from La Laiterie Nantaise, fruit and vegetables from the family-run organic farm… The night we went, Josselin sent out a comforting country terrine with zucchini jam and pickled onions; followed by pearly hake, spelt wheat with cream of zucchini, beurre blanc sauce and raspberries; and an unexpected pavlova with strawberries and peas! In their épicerie section, you’ll find vegetables, eggs, canned goods, spices, coffees, teas, and a selection of natural wines. // Catherine Jamon
