After several years in Grimaud, Jacopo and Victoire have brought their project to the heart of Nice. Their philosophy remains unchanged: cook with passion, simplicity, and love, using the best local ingredients. The team greets guests like old friends, and the dining room feels like an extension of home.
Every morning at 11 Rue Grimaldi, the kitchen prepares fresh pasta using traditional techniques. The dough is bronze-drawn to create a pleasing texture, and the shapes change regularly — gigli, pici, mafaldine, ravioli. Guests can also buy fresh pasta to take away.
Apopino’s short carte — four starters, four mains, four desserts — changes with the seasons. The kitchen works closely with local market gardeners, fishermen, and artisans to source the freshest produce. Stews simmer, juices reduce, ice cream churns: everything is made in-house. The result is a cuisine that is sincere, full of flavour, and deeply connected to the Mediterranean terroir.
